THE ORIGIN OF COCOA

Mache-Chindul, Ecuador

To the southwest of the province of Esmeraldas and north of Manabí, the Mache-Chindul Ecological Reserve is one of the last remnants of tropical humid and dry forest on the Ecuadorian coast. Created on August 9, 1996, it is recognized worldwide as a natural refuge strongly influenced by the constant presence of fog and rain from the Pacific.

One of the most representative characteristics of this area is the presence of important tropical humid forests typical of the Chocó region. The biogeographic Chocó region extends from the east of Panama to the coast of Ecuador with Peru, passing through the Pacific coast of Colombia, and is considered one of the natural wonders of the American continent. More than a territory, this region represents an ecosystem where the privileged conditions of sun, water, light and air, essential elements for life, are present permanently and exuberantly; but also, it is a region isolated by the Andes mountain range. This natural barrier generates a large number of endemisms, and approximately 25% of the species that live there are not found anywhere else on the planet.

In the middle of this natural treasure, surrounded by lush tropical forests, waterfalls and a great variety of species, the cocoa we use grows. Protected by the community of Mono Bravo, its inhabitants are the guardians of guaranteeing the highest quality of the product: they grow the cocoa through traditional methods and ferment their beans in bags covered with banana leaves to reduce the acidity without losing the rich textures and flavors. Later, the village cowboys are also in charge of transporting their excellent cocoa, elegantly traveling along streams and streams on horseback.

Notes of caramel, tropical fruits and hazelnut can be found in this unique variety of National cocoa. The name of Arriba Nacional cocoa comes from "upstream", honoring the cowboys who elegantly travel along streams and streams on horseback to transport their exceptional cocoa beans.
